The Tradition 2003 wears living colours with intense ruby reflections. Pleasant, herby and peppery, it develops in mouth flavours of fresh fruits and marmelade (sweety cherries, redcurrants...). This vintage keeps its potential even after more than 10 years !
The wine maker's advice
The Tradition 2003 can be drunk with games, as a wild boar and a spicy sauce to coat the steam potatoes with parsley. Or for more festive meals, like a braised pheasant with grapes and horns of plenty. For this, cook the pheasant 2 minutes on each side in a pan with nut oil, take it off. Then put in the pan sliced onions and the horns of plenty then the grapes. Cook 2 minutes and put back the pheasant in the pan with the preparation. Close all and put in the oven for 20 minutes at 180°C. To serve with tarts of broccoli and a cream of celery and nuts.
