Harvest
Manual, with a selection in the vineyard on the stainless grape bin. The Harvest started on the 26th of September 2014. The rain from beginning April and end of July allowed us to harvest beautiful grapes with a perfect health status, a good tannic structure and beautiful colours.
Wine-Making
Traditionally during 15 days - with thermoregulation to controlled the temperatures
Ageing
8 to 12 months in oak big barrels
Tasting
Intense and rich nose of fresh red fruits (strawberries, raspberry, cherry, currant...) and spices. A great balance and freshness complete this aromatic richness on the palate.
Winemaker's Advice
The intensity and richness of the Vieilles Vignes 2012 will marry very well with a lamb moussaka or a lamb shoulder cooked in oven with thyme bouquet on a bed of caramelized potatoes. Also, a beef rib with shallot, accompanied with new potatoes browned in a pan. Served with a homemade carrots and pumpkins purée , for festive tables !
